Chai this


Home brewed vegan chai is the only way to go. I've been playing with various combinations for years, but this is the blend of spices that I find most satisfying over the holidays.

In a small sauce pan, add:
3 cups water
1/2 tsp whole cloves
1/2 tsp peppercorns
2 small cinnamon sticks
8 cardamon pods, broken open
sprinkle of ground ginger
Bring contents of sauce pan to boil. Simmer at low heat for 30 minutes.
Add 1 black tea bag and allow to simmer for an additional 3-5 minutes.
Pour tea from sauce pan through a strainer into a large bowl. Return strained tea to pot.
Add:
1 tbsp maple syrup
1/2 cup soy milk
sugar to taste
Bring tea just to boil and remove from heat. Serve immediately.
For children, combine 1 part tea with 1 part soy milk.

  1. i have been looking for a good home chai recipe for a while. we can get some good mixes over here in australia, but its nearly impossible to get someone to part with their own recipe. thank you very much, i will give this a try!

  3. I am new to your blog and thoroughly enjoy it. I grew up drinking tea in Bangladesh and your recipe is very authentic.
    The only thing I might add is try some whole fennel seeds in the fix (or ground). Fennel can also help to settle upset tummies. It adds a nice sweet liquorice type flavor. Also once I cam to the US I used crystalized candy ginger in the mix and that was fun! Thanks again so much...I look forward to learning how to sew from your blog..I love the baby clothes. Bipasha

    Fennel: good idea! I'm always looking for yummy additions. My 4 yr old is absolutely hooked on mama chai and can not stand the stuff they sell in teabags around here, or worse, as syrup in bottles (ugh).

    Good luck with the sewing. I'm hoping to have a baby friendly design up by the end of the weekend :)

  5. I've been making a fairly messy version of this minus the cardomon as I can't find it down here and it's been working out okay. Thanks for the recipe - Chai doesn't exist here in Brasil (or at least not in the north east where I am) and I have been missing it for five years.

  6. AkuTyger you can find cardamom in Rio de Janeiro, look for casaspedro.com.br online...it's a bit expensive but it definetely worths. Check ciadaservas.com.br also.

    I have a cup of chai every morning and I love it.
