PB & C drop cookies

Lately we are on a cookie kick, so I thought I would share out most favorite, hands down, cookie recipe.

PB & C Drop Cookies

In a large saucepan, heat up:

1/2 cup vegan margarine
1/2 cup soy milk
1 1/2 cups sugar

Bring mixture to boil, then add:

5 tbsps cococa

Mix together until well blended, then add:

1 cup shredded coconut
2 1/2 cups rolled oats

Boil mixture for 5-7 minutes, stirring continuously. Remove from heat and stir in:

2 tbsps peanut butter

Use a spoon to drop mixture on a cookie sheet. Place in refrigerater to chill. Once cookies are fully cooled, remove from cookie sheet, eat a few, and place the rest in an airtight container. Store in refrigerater.
